Abu Shady (Tony Haddad): From Family Duty to Culinary Passion – Bringing Lebanese Flavors to Dubai with Zaroob

Tony Haddad, known as the famous Abou Shady, is bringing his passion for Foul cuisine to Zaroob on Sheikh Zayed Road, as part of a unique collaboration with NoGarlicNoOnions. A veteran of over 40 years in the culinary world, Abu Shady’s story is one of resilience, love for food, and a deep connection to his roots.

Abu Shady’s journey into the culinary world began as a response to personal responsibility. Following the passing of his father, he took the reins of the family’s food business. What initially began as a necessity soon evolved into a deep passion for cooking. Over time, he developed a profound love for food, transforming his role from a duty to a lifelong career. His menu, curated based on personal preference, reflects a deep connection to the food he prepares and serves, making each dish as personal as it is delicious.

Signature Dishes:
Abu Shady is known for his signature Lebanese dishes that have become a staple in his cooking. Among his main star items are:

  • Balila – A flavorful chickpea-based dish with a distinct twist.
  • Foul – A classic dish loved across the Levant and especially in Lebanon..
  • Labneh with Onions and Meat – A savory combination of fresh labneh and perfectly cooked meat.
  • Quail eggs – A delicacy that adds a unique touch to his menu.
  • Eggs with “Leyet el Ghanam” (Lamb Fat) – A traditional and rich dish with a unique taste.

Abu Shady is particularly famous for his hummus, which is peeled in a special process that removes the skin, setting it apart from other traditional preparations. This small yet significant detail has garnered attention, making his hummus a sought-after dish that stands out.

A Culinary Journey Beyond Borders
For Abou Shady, food is more than just a job – it’s a way of life. He is thrilled to bring his love for Foul and Hummus to Dubai, where his culinary expertise will meet the city’s multicultural food scene. Having toured the Levant as part of the Mission Foul project with Anthony Rahayel from NoGarlicNoOnions, Abu Shady traveled to Jordan, Egypt, and Lebanon, where he explored the rich, diverse world of street food. The collaboration is a chance for him to share the best of Lebanese street food with a global audience, starting with his featured dishes at Zaroob.

Abu Shady’s venture to Dubai is not just about food; it’s about bringing the flavors of his homeland to the world. His signature dishes, including foul and hummus, will be showcased at Zaroob, giving Dubai food lovers an opportunity to experience authentic Lebanese street food like never before.

The journey to Dubai, which was captured in a lighthearted and entertaining video, showed Abu Shady’s excitement and anticipation for the adventure. The video captures the fun dynamics of the group, their excitement about their first trip to Dubai, and the warm welcome they received upon arrival. Watch the journey unfold in the video here:
