L’Artisan du Burger: Expected Perfection, It’s Not! Leave the Burger to the Americans

For a concept that has been created for a year or so and having six locations around Paris; that’s a success. After reading about L’artisan Du Burger’s first franchise in Dubai, I wanted to try it in Paris first.

Part of the Michelin guide’s recommended list of restaurants in 2018, L’Artisan is a joint venture between four culinary professionals; 

  • Kelly Rangama, candidate at Top Chef 2017. 
  • Eric Robert, Meilleur Ouvrier de France 2000. 
  • Micheal Greenwold, prix flooding international 2012. 
  • Joy Astrid Poinsot, top chef candidate in 2016.

Bread, meat, and fries are all carefully sourced from professional: 

  • Buns from Graines de Créateurs. 
  • Meat from Boucherie Metzer. 
  • Fries from Les Frites de l’Artisan.

The restaurant is cozy, made of wood and stones. It feels upscale without being commercial or giving you the impression of eating at a fast food.

The beef burger is good but I’ve had better. The bun could have been more tender and the burger juicier and needs more sauce. The meat is good, good enough but could have been better with a sprinkle of salt and pepper. Too many roquettes! No sauce so where is the signature flavor? As an overall experience it’s not gourmet as I expected it to be and not junky to be enjoyed with a load of fat; a missing identity if I may say.

The salmon burger smells and tastes onions; it feels like a tartar. A lack of sauce makes it hard to swallow. Overcooked salmon is so dry. No onions this is a necessity and way more sauce on both buns.

PS: why ask how you like your meat since it’s overcooked anyway!

The best thing at L’Artisan Du Burger are the fries: call the place L’Artisan des Frites. My conclusion: An overrated burger place.
