Healthy and Easy Home Cooking: Grilled Halloumi Salad

Grilled Halloumi Salad

Ingredients:

Salad:

  • A handful of mesclun 
  • A handful of baby spinach 
  • 100g  diced smoked turkey
  • 100g Goat cheese crumbles
  • 1 pack Light Grilled Halloumi cheese
  • 2 tbsp Dried cranberries 
  • 2tbsp pumpkin seeds

Dressing:

  • 2 tbsp mayonnaise 
  • 3 tbsp mustard
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • Pinch of salt
  • 1/2 tsp black pepper 

Set the mesclun and baby spinach in a bowl. 

Cover with the diced turkey and the crumbled goat cheese. 

Add cranberries then cover with grilled light halloumi cheese. 

Sprinkle pumpkin seeds on top. 

For the dressing, start by mixing the mayo and mustard then slowly add the lemon juice and oil.
